Ingredients
  1. 6 large mushrooms
  2. 1 lb ground sausage
  3. 2 cups of chopped fresh spinach
  4. 3 spring onions
  5. 1 cup grated mozzarella
  6. 5 oz whipped cream cheese (I use herb flavored)
  7. 1/4 cup grated parmesan cheese
  8. salt and pepper to taste
Instructions
  1. preheat oven 375 degrees
  2. cook sausage on low heat until well done
  3. While the sausage is cooking chop your fresh spinach and spring onions and put into mixing bowl
  4. Add mozzarella to mixing bowl with spinach and mix well
  5. Add cream cheese to mixture and pour cooked sausage over the top to soften the cream cheese and then mix all ingredients well.
  6. Place mushrooms on a muffin pan with the stems cut out and spoon the mixture into each mushroom
  7. Sprinkle parmesan cheese on top of stuffed mushroom
  8. Bake for 20 minutes or until cheese is melted and golden brown
Notes
  1. Season sausage to taste, salt, pepper or any other spice you prefer. Muffin pans work well for catching juices from mushrooms but you can use a baking sheet if you prefer.

Looks like a great recipe. I may try and work out a vegetarian twist. Probably use potato and some other vegetables in place of the sausage.

I love stuffed mushroom dishes in general so this is something that I’d definitely try. I like that it’s low-carb, but I’m planning to add another kind of cheese. Cheese & Mushroom always made a good combo for me. That, plus wine.
