T.J’s Keto Dough – One Dough So Many Options
T.J's Keto Dough is very versatile. I was originally trying to come up with a pasta recipe, which didn't exactly turn out, but I am still working on it. I did however find when making this dough, there is so much you can do with it. The Dough should have 8 to 10 servings depending on what you make with it and the nutritional information is based on 10 servings. I put together a few idea's below on what I have been making with this dough and look forward to hearing about you idea's, so please feel free to leave comments and let me know what you made! First thing first, this is a very sticky dough to work with. When rolling dough out for any creation I use a few drops of olive oil on the work surface, rolling pin and my hands. Hint: The dough seems to cut the best with a pizza roller for nice clean cuts that don't stick. Also you will want to use a metal or sharp spatula to lift dough off work surface so it does not tear. I actually used the pizza roller to lift up dough. Another nice thing is that you can make more than one thing out of a batch of dough. So say for instance you are cooking for one. You can make crackers for snacks, calzones for lunch and pizza for dinner. Break up your dough into balls and place whatever amount your not using back in the fridge until your ready for it.
Who remembers Totino's Pizza Rolls? Those little suckers used to be one of my favorites as a kid. This dough makes a pretty good pizza roll. What I did was just roll a small portion of dough and then used a pizza cutter to make a square. I then cut into smaller squares. On bottom I put a teaspoon of pizza sauce and topped with cheese. So many options and you can fill with your favorite pizza toppings. I then placed a piece of dough on top of sauce and cheese and used the back of a fork to push down and seal up all the edges. I baked for 15 minutes until the outer crust looked crispy. Cooking time will depend on on big or how full you make your pizza pocket.
Well technically I made this into a hot ham and cheese and not a calzone, but basically being very similar to the pizza rolls you can fill them with whatever you want. Just roll out a small potions of dough to the size you would like. I like to think of a serving size maybe the size of a Hot pockets, if you've ever had one of those. Layer in your fillings, could be anything you like, meats, cheese, spinach, sauces. Baste outside with melted butter and add any season you would like. Bake in oven for around 15 minutes until the crust looks golden and crisp. What I love about these is that they are not greasy on the outside and make the perfect grab and go lunch snack for office.
I love snacking and one of my old favorites was Cheez-it's! This dough makes a great cheese cracker. Just simply roll out a portion of dough. Cut the edges off and then make small squares the size of crackers you would like. Using a fork poke holes in the center to prevent the dough from bubbling in the middle. For best results in cutting use a pizza cutter for clean cuts and then lift crackers up with edge of pizza cutter to prevent tearing from the stickiness of the dough. Season or flavor your crackers to taste. Some idea's might be to add rosemary, garlic, chives or salt. This would really bring out a nice flavor.
Cream Cheese Cinnamon Pinwheels
Cinnamon rolls are the best! These cream cheese cinnamon pinwheels make a nice treat especially for breakfast. While I made mine a little tiny for bite size treats, you could actually make them a little larger for more off a cookie. The cream cheese actually softens the dough when cooking so they are not as crisp as the other recipe idea's for this dough. Roll out dough and then spread cream cheese and top off with cinnamon. I used the pizza cutter to lift up the dough from the bottom where it's sticky and roll up. Slice into pinwheels and then flatten between your fingers. Bake for about 15 minutes or until golden. I topped them off with more cream cheese and cinnamon while they were still warm.
Thin Crispy Pizza Crust
If your a huge fan of thin crust pizza you might just love this one. I have never been a doughy pizza kinda girl so I am really loving how my pizza's turn out. The one I made for example is just plain tomato sauce and cheese, but be creative! Top this baby off with all of your favorite pizza toppings. For the crust just roll out small circles for personal pizza or the whole dough ball for a large pizza. Use a fork to poke hole in the center to prevent bubbling. Carefully lift crust up with your pizza cutter or share edge utensil and bake for 10 minutes and then add toppings and bake another 10 minutes until your cheese is melted.
Gnocchi, Croutons or Pasta Substitute
Gnocchi is pretty awesome stuff and while this cannot compare to the real thing it does make a great side dish by adding just about anything. Top off your Gnocchi with your favorite sauce or dish such as stroganoff or other favorite meal you would pour over pasta. Use the gnocchi as croutons to top off a salad or simply eat plain with butter and parsley. The type of season you use will depend on what your going to use for. If using for croutons, you might consider adding garlic and herbs. If you using with sauces you may choose just to salt or leave plain. So many options. To make the basic Gnocchi take pieces of dough and roll with hand into a long tube like shape. Using a pizza cutter cut into 1 inch bits and then use a fork to flatten. Heat up some oil in a pan on low heat and add your gnocchi. Fry gnocchi for about 5 minutes until it browns and remove from heat and ready to serve.
Last but not least, soup dumplings. I absolutely love chicken dumpling soup. Surprisingly these dumplings cook up very similar to regular dumplings. Your seasoning for these will depend on what kind of soup you are making. I added salt and mixed herbs and garlic. Roll small ball shapes in your hands and place into your boiling soup when it's ready to serve. Don't make the balls to big as they will have a harder time cooking through. The dumplings will drop to bottom and then float to top when done much like a regular dumpling. Let boil for a couple of minutes before serving.

- 1⅛ Cups Almond Flour - For nut allergy can substitute with Ground sunflower seed flour
- 2 Cups Grated Parmesan Cheese
- 1 Tbsp Cream Cheese
- 5 Large Egg Yolks
- Place 5 large egg yolks in a bowl and beat until creamy.
- Add 1 tbsp cream cheese and mix well until completely blended.
- Add in 1⅛ cups almond flour. Add flour in small amounts at a time until blended
- Add 2 cups of Parmesan cheese 1 cup at a time.
- I mix with a fork until dough becomes very sticky and stiff and then knead with hands to form 4 even size dough balls.
- Place dough in refrigerator for two hours before you make your next delish dish! This is a very sticky dough and is easier to work with when refrigerated. keep in dough balls in refrigerator when not using. I use olive oil on my surface, rolling pin and fingertips when working with dough to prevent sticking.
- When baking preheat oven and bake at 375 degrees usually most things only need 15 minutes to bake.
